Brown Ale Quinoa with Mushrooms and Onions

Ingredients

1 Tbsp butter
  • 4 tsp extra virgin olive oil
  • 1 small red onion, sliced
  • 2 cups mushrooms
  • 1 cup brown ale
  • 1 cup vegetable stock
  • 1 cup quinoa
  • 1/4 + salt (to taste)
  • 1/8 tsp pepper
  • 1 Tbsp sage, chopped

  • Directions

    1. To make this brown ale quinoa, heat butter and olive oil in a medium pan over medium-high heat.
    2. Add the onions and mushrooms and cook until browned, about 10 minutes. When the onions are soft and the mushrooms browned, add the remaining ingredients.
    3. Cover, reduce heat, and simmer for 20 minutes, or until all the liquid is absorbed. Turn off heat and let sit 5 minutes. Serve warm.
